Hey guys! I hope you have all had a great Tuesday. Since we are moving in a month we have just been busy organizing and downsizing. We are going from a 3 story house to a one story house. There has been a ton of downsizing and way more to go. It’s amazing what you can accumulate in such a short time.
The other day I was craving some quinoa and thought maybe I can make it into a salad. I made enough so I could have a salad the next day as well. Since I was already making one, I made another in a large mason jar!
So I started cooking my quinoa which took about 20 minutes or so. As that was cooking I got my corn and sweet potatoes cooked up as well. I only had steamable bags so I popped them in the microwave and then let them cool. While all of that was cooking I cut up some carrots and cucumbers.
The first thing I put in my jar was the dressing. I’m very picky when it comes to dressing and I really only like vinegrettes. My favorite is Raspberry Vinegrette.
I then added my meat which was chicken deli slices. I just cut them up into small pieces. Next I added corn, carrots and sweet potatoes. Once my quinoa was all cooked up I put a good layer of that over my veggies.
The final touches were cucumber, spinach, sunflower seeds and cranberries.
The only thing I had to do the next day was put it in a bowl and eat. I did add extra spinach to my salad because I really like spinach but other than that my lunch took no time at all.
- Spinach ( or whatever type of lettuce you like)
- Cooked quinoa
- Meat ( whatever meat you enjoy; turkey, chicken, beef, etc.)
- Sweet potatoes
- Sunflower seeds
- Salad dressing (Raspberry vinegrette is amazing)
- Any other veggies or toppings you like!
Put it in a mason jar or Tupperware container and enjoy the next day! The best part is if you don’t have much time you can just take it with you.
This is definitely my new go to salad! It was extremely filling and delicious!
